Ingredients
- 1 kg pumpkin, cubed
- 2 carrots, sliced
- 1 tbsp olive oil
- 1 tsp ginger
- 3 cups low-FODMAP stock
- ¼ cup lactose-free cream
- Salt & pepper
Instructions
- Roast pumpkin + carrots 25 minutes at 200°C (400°F).
- Blend roasted veg with stock.
- Heat in a pot; add cream, ginger, salt & pepper.
