Ingredients

  • 1 kg pumpkin, cubed
  • 2 carrots, sliced
  • 1 tbsp olive oil
  • 1 tsp ginger
  • 3 cups low-FODMAP stock
  • ¼ cup lactose-free cream
  • Salt & pepper

Instructions

  1. Roast pumpkin + carrots 25 minutes at 200°C (400°F).
  2. Blend roasted veg with stock.
  3. Heat in a pot; add cream, ginger, salt & pepper.
