Ingredients
- 1 lb ground turkey
- 1 cup baby spinach, finely chopped
- 1 egg
- 1/2 cup breadcrumbs or gluten-free breadcrumbs
- 1 tbsp garlic-infused olive oil
- Salt & pepper
- 1 cup quinoa, cooked
- 1 jar low-FODMAP tomato basil sauce
Instructions
- Preheat oven to 375°F (190°C).
- Combine turkey, spinach, egg, breadcrumbs, oil, salt, and pepper.
- Form meatballs; bake 20–22 minutes.
- Heat sauce on stovetop.
- Serve over cooked quinoa.
