Ingredients:
- 2 chicken breasts, diced
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 cup green beans, chopped
- 4 cups low-sodium chicken broth
- 1 tbsp olive oil
- Salt and herbs to taste (thyme, parsley)
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until lightly browned.
- Add carrots, zucchini, and green beans, and sauté 3–4 minutes.
