Bowl of low-FODMAP chicken and vegetable soup with herbs

Ingredients:

  • 2 chicken breasts, diced
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 cup green beans, chopped
  • 4 cups low-sodium chicken broth
  • 1 tbsp olive oil
  • Salt and herbs to taste (thyme, parsley)

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until lightly browned.
  3. Add carrots, zucchini, and green beans, and sauté 3–4 minutes.
  4. Pour in chicken broth, bring to a boil, then reduce heat and simmer 15–20 minutes.
  5. Season with salt and herbs. Serve warm.
